Nectarine Cake

2 nectarines, or 2 peaches

1 1/2 cup (375 mL) all-purpose flour

3/4 cup (180 mL) granulated sugar

1/4 tsp (1 mL) salt

2 tsp (10 mL) baking powder

1/4 tsp (1 mL) baking soda

3/4 cup (180 mL) buttermilk

1/2 cup (125 mL) unsalted butter melted and cooled

1 tsp (5 mL) anilla extract

Preheat oven to 350 F. Line a nine-inch round pan with parchment paper. Set aside.

Slice nectarines in half and remove pits, chop one nectarine into small chunks. This will be for the cake batter. Set aside. Slice the remaining nectarine for the top of the cake, the slices should not be thicker than a 1/4 inch.

In a bowl, combine flour, sugar, baking powder, baking soda, and salt. In another mixing bowl, whisk together buttermilk, melted and cooled butter, eggs, and vanilla. Add your dry ingredients to buttermilk mixture and stir in gently. Add nectarine chunks to cake batter and gently fold in. Pour the batter into the prepared cake pan, smooth the top with a spatula and arrange nectarine slices on top of the cake. Sprinkle one tablespoon of sugar over the top of the cake.

Place cake on the middle rack in the oven and bake for 40-45 minutes. Remove cake from oven and cool completely. Dust the cake with powdered sugar before serving.
